Three Bean Salad

1 can navy beans
1 can cannellini beans
1 can butter beans
1/2 onion
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon dried oregano
1/4 cup fresh parsley
1 big cucumber
2 tablespoons capers
1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon honey
1 tablespoon dijon mustard

Drain and rinse 1 can each of navy beans, cannellini beans, and butter beans under cold water.

Chop half of an onion and add it to the beans.

Add 2 teaspoons of salt, 1 teaspoon of black pepper, and 1 tablespoon of dried oregano to the mixture.

Chop 1 big cucumber (de-seeded and peeled) and add it to the bowl.

Add 1/4 cup of chopped fresh parsley and 2 tablespoons of capers to the bowl.

In a separate bowl, prepare the dressing by mixing 1/4 cup of olive oil, 1/4 cup of red wine vinegar, 1 tablespoon of honey, and 1 tablespoon of dijon mustard.

Pour the dressing over the bean and vegetable mixture.

Toss everything together until well combined.
