Three Bean Salad

1 can navy beans, drained and rinsed
1 can cannellini beans, drained and rinsed
1 can butter beans, drained and rinsed
1/2 onion, chopped
1 big cucumber, deseeded and peeled
2 tbsp capers
1/4 cup fresh parsley, chopped
2 tsp salt
1 tsp black pepper
1 tbsp dried oregano
1/4 cup olive oil
1/4 cup red wine vinegar
1 tbsp honey
1 tbsp Dijon mustard

In a large bowl, combine the drained and rinsed beans.

Add the chopped onion, cucumber, capers, and parsley to the bowl.

Sprinkle salt, black pepper, and dried oregano over the vegetables and beans.

In a separate bowl, whisk together the olive oil, red wine vinegar, honey, and Dijon mustard to make the dressing.

Pour the dressing over the bean and vegetable mixture.

Toss everything together until well combined.
