Mix instant dry yeast with room temperature water until dissolved.
Add flour, sugar, and salt to a mixing bowl.
Add milk, then the dissolved yeast mixture to the flour mixture.
Mix on low speed, then add egg yolk and mix for about 4 minutes.
Increase speed and mix for another 10 minutes until the dough is smooth and elastic.
Perform the window test to check gluten development.
Shape the dough into a smooth ball and let it rise for 1 hour at room temperature until doubled in size.
Prepare the butter block by shaping butter into a square and chilling it in the fridge for 30 minutes.
Make the cream cheese filling by mixing cream cheese, heavy cream, and powdered sugar until smooth.
Transfer the cream cheese filling into a piping bag.
Roll out the risen dough into a rectangle, about twice the size of the butter block.
Wrap the butter block with the dough, ensuring all edges are covered.
Press down to attach the dough to the butter, then roll out into a rectangle again.
Perform a book fold and chill in the freezer for 15 minutes.
Repeat the book fold process and chill again until firm but not frozen.
Roll out the dough to the desired thickness using a rolling pin with thickness guides.
