Today, variations can be found across the Caribbean and beyond, reflecting local tastes and ingredients.

In a bowl, combine 3 cups of all-purpose flour, salt, and turmeric.
Add instant yeast and brown sugar to the flour mixture.
Mix everything together until well combined.
Gradually add in 2 and 1/4 cups of water, starting with half, mixing as you go.
Continue to add water little by little until a smooth dough forms, mixing for about 5 to 8 minutes until the gluten develops.
Clean down the sides of the bowl, cover with plastic wrap, and let it rest in a warm place until it doubles in size.
Once risen, remove the plastic wrap and optionally spray the dough with a little oil to prevent sticking.
Use a spoon, cookie scoop, or your hands to take small portions of the dough for frying.
Heat vegetable oil in a deep pot over medium to medium-low heat, testing the temperature with a small piece of dough; it should sizzle when added.
If the dough sticks to your hands or spoon, dip them in water to help release it easily into the hot oil.
Fry the dough portions for about 2 to 3 minutes, turning them to ensure even cooking until golden brown and doubled in size.
Remove the fried pholourie from the oil and drain on paper towels.
Serve hot with spicy tamarind chutney for dipping.
