Stir in minced garlic and ginger, cooking for 1-2 minutes until fragrant.
Add chopped bell pepper and sauté for another 3-4 minutes.
Incorporate chopped tomatoes, cooking until softened, about 5 minutes.
Stir in curry powder, thyme, and bay leaves, cooking for 1 minute.
Add soaked beans and enough water to cover them by 2 inches.
Bring to a boil, then reduce heat and simmer for 45-60 minutes until beans are tender.
Add diced carrots and chopped spinach, cooking for an additional 10 minutes.
Season with salt and seasoning cubes to taste.
Remove bay leaves before serving.
