Sift the stone-ground whole-wheat flour and discard leftover particles.
Add whole wheat flour and mix.
Spread the flour mix in a baking pan and place it in a preheated oven to 200°C / 395°F for 45 minutes, stirring every 10 minutes.
Roast raw almonds in the oven at 180°C / 350°F for 15 minutes to make almond butter.
Let the almonds cool, then place in a food processor and mix for 10 minutes until creamy almond butter forms.
Roast sesame seeds in a pan on medium heat until they lose their raw taste, then mix in a food processor until half ground.
Grind gum arabic pebbles with a little sugar until fine powder.
Chop a handful of roasted almonds into a coarse mixture.
Mix the flour mix, crushed sesame seeds, chopped almonds, ground cinnamon, ground anise, gum arabic powder, ground nutmeg, salt, and almond butter in a large bowl until well integrated.
Add powdered brown sugar, honey, and olive oil, and mix until combined.
Knead the sellou for 5 minutes until a homogeneous paste forms.
Present Sellou on a plate and decorate with blanched roasted almonds.
