Today, variations exist worldwide, from rich brown gravies to lighter sauces, adapting to local tastes and ingredients.
Chop fresh thyme and sage.
Reserve 1 cup of turkey pan drippings from roasting.
Supplement drippings with 1 cup of reduced sodium chicken stock.
If you don't have enough drippings, adjust the amount of stock accordingly.
To make a roux, melt 2 tablespoons of butter in a saucepan over medium heat until foamy.
Sprinkle in 2 tablespoons of flour and whisk immediately to avoid burning.
Cook the roux until it turns golden, about a few minutes, ensuring it doesn't burn.
Add the turkey drippings gradually to the roux while whisking to avoid lumps.
Bring the mixture to a boil, then reduce to a simmer to allow thickening.
After 2-3 minutes, add an additional cup of chicken stock to adjust the gravy's consistency.
Finish the gravy with chopped herbs, salt, and black pepper to taste.
Let the gravy simmer for another 10 minutes to meld flavors, adjusting thickness as needed.
