1

Start with trout that has been butterflied.

2

Season the trout inside and out with olive oil, salt, and black pepper.

3

Add sliced lemon and lots of fresh herbs inside the trout.

4

Optionally, add sliced onions, garlic, or baby spinach in the middle.

5

Fold the foil (or use parchment paper) into a tight packet to seal the trout.

6

Bake the fish in the oven for 10 to 20 minutes, checking after 10 minutes to judge how much longer it needs.

7

Once done, you can serve the trout whole or fillet it.

8

To fillet the fish, use a spoon and butter knife to pull away all of the fins.

9

Press the knife into the soft flesh around the head and tail, following the line down the fish.

10

Carefully pull the first fillet away from the bones, then push the second fillet off the bones.

11

Scrape away any small bones that might still be stuck to the fillets.

12

Grab the tail and pull it up and away from the fish; it should come easily.

13

Clean the bottom fillets of any small bones and move to a plate with the rest of the fish.

14

Serve with fresh lemon and the juices from the packet, drizzled with olive oil.
