2 medium tomatoes
1 medium onion
3 tablespoons vegetable oil
1 teaspoon salt
1 bell pepper (optional)

Put the pot on high heat.

Add a little oil to the pot.

Add chopped onions to the pot and stir until soft and slightly brown (about 2-3 minutes).

Add the chopped mushrooms to the pot (no water or salt at this point) and stir to mix with the onions.

Cover the pot to steam the mushrooms until they shrink and look cooked.

Reduce the heat while the mushrooms are steaming.

If not adding tomatoes, add a little salt and let it simmer. Otherwise, add chopped tomatoes and salt now.

Cover the pot again and cook until the tomatoes are cooked.

Serve the mushrooms with aromatic rice, beans, and greens.
