1 Litre good strong Chicken stock
350g Risotto rice (Arborio, Carnaroli or Bomba)
200g Spicy Chorizo ring sliced diagonally
1 Medium onion
6 Chicken thighs skin on
Half a cup of frozen peas
2 Lemons
Saffron
175ml white wine
Splash of Olive oil
Paprika
Cayenne pepper
Garlic granules
Mixed Herbs
Salt to taste
