Mix gochugaru, gochujang, soy sauce, mirin, honey, sesame oil, minced garlic, and ginger paste in a bowl to create the marinade.

Add pork belly strips to the marinade and coat well. Let marinate for at least 30 minutes.

Preheat grill or grill pan over medium-high heat.

Place marinated pork belly on the grill and cook for 4-5 minutes per side until crispy and caramelized.

Remove pork belly from grill and let rest for a few minutes.
