Clam Chowder

3 slices thick cut bacon
5 tablespoons salted butter
1 medium onion, finely chopped
2 celery ribs, diced
2 medium-sized carrots, diced
4 cans (6.5 oz each) chopped clams

Cut the bacon into small pieces.

Heat a stainless steel pot on medium heat and add the bacon to cook until golden and grease is released.

Cut the celery ribs into small pieces.

Cut the carrots into small pieces.

Once the bacon is cooked, remove excess grease, leaving about 4 tablespoons in the pot.

Add 5 tablespoons of butter to the pot and let it melt.

Add the chopped onion, celery, and carrots to the pot and cook until they sweat and release their flavors.

Drain the chopped clams and reserve the clam juice.

Add the drained clams to the pot.
