Clam Chowder

6 bacon slices
1/2 cup diced onions
1/2 cup diced celery
5 tbsp flour
1/2 tsp dried thyme
1 tsp Lawry’s seasoning salt
1 quart chicken broth
1 (8 oz) jar clam juice
3 (6.5 oz) cans chopped clams
2 bay leaves
1 cup half and half
1/2 cup heavy whipping cream
1 tbsp cornstarch mixed with 1 tbsp water
Salt and pepper to taste
Parsley for garnish

Cook the bacon slices in a pot until crispy, then remove and set aside.

In the same pot, add diced onions and celery, sauté until softened.

Stir in the flour and cook for a minute to create a roux.

Add the dried thyme, seasoning salt, chicken broth, and clam juice, stirring to combine.

Add the chopped clams and bay leaves, and bring to a simmer.

Stir in the half and half and heavy whipping cream, and let it heat through.

Mix the cornstarch with water and add to the chowder to thicken it, stirring continuously.

Season with salt and pepper to taste, and garnish with parsley before serving.
