Chop the onions and place them on a plate.

Add 1 1/2 tablespoons light soy sauce, 1 tablespoon mirin, 1 tablespoon oyster sauce, 1 tablespoon brown sugar, and sesame oil into the blender with the pear, garlic, and ginger, then blend until pureed.

Pour the marinade over sliced ribeye beef and add sliced onions and spring onions.

Massage the marinade into the beef and cover with cling film, then refrigerate for at least 2 hours (up to overnight).

After marinating for about 3 1/2 hours, wash hands and change chopping boards and knives.

Heat a pan with oil and fry the spring onions and chilies first.
