Finely mince 2 cloves of garlic.
Dice 1 purple onion.
Chop 3 green onions into small pieces.
Cut some carrots into small dice.
Lightly beat 2 eggs.
Marinate 80/20 ground beef with water, soy sauce, oyster sauce, rice wine, a little sugar, white pepper powder, and corn starch; mix thoroughly.
Add a touch of sesame oil and regular cooking oil to the marinated beef.
Prepare some frozen peas and cooked rice (freshly made or leftover).
Add oil to a hot pan over medium-high heat and sauté the diced onion until lightly browned on the edges.
Add the ground beef to the pan, breaking it up as it cooks.
When the beef is almost fully cooked, add the minced garlic and mix it in with the beef.
Add a touch of rice wine and stir-fry briefly to cook off the alcohol.
Add a touch of dark soy sauce for flavor and toss to mix evenly; then remove the ground beef from the pan.
If using cold rice, heat it up in the microwave.
Add more oil to the pan if needed and stir-fry the eggs until fully cooked, breaking them up as you go.
Add the rice to the pan and stir-fry to mix with the eggs; heat the rice until hot if it was cold.
Season the rice with a little salt, soy sauce, and dark soy sauce; stir until the color looks even.
Add the diced carrots and green peas to the pan and stir-fry briefly.
Add the ground beef back to the pan and stir-fry everything briefly to combine flavors.
Add the chopped green onions and toss everything together to mix well.
