Wash the rice a couple of times before cooking it in the Instant Pot.
Prepare the ingredients by organizing them; cut the vegetables into strips.
For the beef marinade, combine 1 tablespoon of oyster sauce, 1 teaspoon of light soy sauce, 1/4 teaspoon of white pepper, 1 teaspoon of cooking wine, 1 teaspoon of cornstarch, and 1 tablespoon of water.
Coat the wok with vegetable oil and heat it up.
Cook the eggs in the wok for 15 to 20 seconds before transferring them into a bowl.
Spread the beef out in the wok and let it sit for 20 seconds without stirring to allow the bottom to cook.
Use a spatula to fold the beef over and let the other side cook for another 20 seconds.
Increase the heat to brown the beef and create a crust, cooking until about 80% done before transferring it to a bowl.
Stir fry the ginger in the wok for 15 to 20 seconds until fragrant.
Add all the cooked rice to the wok and spread it out.
Use hot fresh rice for better results, but leftover rice can be used if heated in the microwave first.
Turn the heat down to low and let the bottom of the rice cook without stirring for about 30 seconds.
Loosen up the rice and stir to break it into individual grains.
Increase the heat to medium-high and spread the rice to fry without stirring for about 15 seconds to make it fragrant.
Repeat the frying step several times to ensure every grain gets cooked.
Stir well to distribute the flavors added during cooking.
Stir in the chopped green onions for about 20 seconds on medium heat to warm them up.
