Peel and slice the onion and dice it really fine.
Dice the garlic fine.
Remove the heart stalk from the spinach and chop the leafy greens into small pieces.
Heat a pan over medium heat and cover the bottom with olive oil.
Add the diced onions and garlic to the pan and cook until translucent, about a couple of minutes, without browning them.
Add the chopped spinach to the pan, cover, and cook for about 5 minutes, mixing occasionally until soft.
In a medium pot, melt butter over medium heat.
Add all-purpose flour to the melted butter and mix until well combined, cooking for a couple of minutes to cook off the flour.
Slowly add milk to the butter and flour mixture, mixing continuously until it starts to thicken.
Season the soup base with salt and black pepper to taste.
Add the cooked spinach and onion mixture to the soup base and mix well.
Taste the soup and adjust seasoning with more salt if needed.
Cover the soup and let it sit off the heat for half an hour to absorb flavors before serving.
