Mix 250 grams of all-purpose flour, 1 teaspoon of salt, and 250 milliliters of water in a bowl until a dough forms.

Knead the dough for 10 minutes and let it rest for 1 hour.

Toast 1 bulb of garlic, 2 green onion stems, 1 tablespoon of cloves, 3 star anise, 1 cinnamon stick, 1 tablespoon of coriander seeds, and a crapload of szechuan peppercorns in a pan for about 5 minutes until aromatic.

Add 1 liter of canola oil to the pan and then add in the garlic and green onions; cook on low heat for about 45 minutes.

In a jar, add 100 grams of citron chili flakes and 1 tablespoon of salt.

Pour the hot oil into the jar using a strainer, being careful not to spill.

Let the chili oil sit for about an hour to develop flavor.

In a bowl, mix ground pork with chopped onion, garlic, green onions, and ginger.

Add 2 tablespoons of soy sauce, 2 tablespoons of Shaoxing wine, 2 tablespoons of salt, and 2 tablespoons of white pepper to the pork mixture; mix well with bare hands.

Roll the dough into a log and cut it into 5 pieces.
