Start by making the shortbread batter using a stand mixer with a paddle attachment, or a hand mixer, or a bowl with a wooden spoon.

Add 225 grams of room temperature unsalted butter to the mixing bowl and beat on medium-low speed until creamy.

Scrape down the sides and bottom of the bowl periodically.

Add 60 grams of confectioners sugar to the butter and mix until combined on medium-low speed.

In a separate bowl, combine 260 grams of all-purpose flour with 1 gram of kosher salt, then stir together.

Gradually add the flour mixture to the butter mixture, mixing on medium-low speed until just combined.

Divide the dough in half and roll each half between two sheets of parchment paper to about 0.25 inches thick.

Chill the rolled dough in the refrigerator for 30 to 60 minutes, or in the freezer for 10 to 15 minutes until firm.
