Thaw the puff pastry on the counter for a few hours until cold but not frozen.
Sprinkle 1/4 cup sugar onto the counter in a 9-inch square.
Lay the thawed puff pastry onto the sugared surface.
Roll the pastry out into a 12-inch square, ensuring sugar is on the surface.
Roll the pastry tightly from both sides to the center, creating a log shape.
Freeze the rolled pastry for 30 minutes.
Preheat the oven to 425°F (218°C).
Cut the chilled pastry into 1/4-inch pieces.
Place the slices onto a baking sheet lined with parchment paper, ensuring they are at least 2 inches apart.
Bake for 8 minutes, then flip the cookies and bake for an additional time as needed.
