Dust a cutting board with dry flour, add puff pastry, and roll out with a rolling pin.

Sprinkle caster sugar and roll gently, then flip and apply egg white.

In a bowl, mix brown sugar, caster sugar, and cinnamon powder.

Sprinkle the cinnamon and sugar mixture, then fold the puff pastry from the left and right towards the center for 3 times and refrigerate for 10 minutes.
