In a bowl, combine 325 g of plain flour and 1/2 teaspoon of salt.
Add 250 g of cold, cubed butter to the flour and toss to coat.
Squish the butter pieces into the flour until they are irregularly shaped and coated.
Add 7 tablespoons of ice-cold water to the mixture, mixing gently to hydrate the flour.
If the mixture is still dry, add up to 3 more tablespoons of water, mixing until it holds together but remains rough.
Turn the mixture out onto a surface and bring it together without overworking it.
Wrap the rough pastry in cling film and chill in the fridge for at least 2 hours or overnight.
Roll out the chilled pastry on a lightly floured surface, being careful not to warm the butter too much.
Sprinkle granulated sugar evenly over the rolled-out pastry.
Fold the edges of the pastry towards the center, meeting in the middle.
Fold the pastry in half again to create a log shape.
Slice the log into 1-inch pieces.
Arrange the slices cut-side up on a baking sheet lined with parchment paper.
Bake in a preheated oven until golden brown, about 12-15 minutes.
Remove from the oven and let cool on a wire rack.
