Buñuelos

Cultural Context

Buñuelos are a traditional Mexican dessert often enjoyed during festive occasions, particularly during Christmas and the Day of the Dead. They are deep-fried dough balls that are crispy on the outside and soft on the inside, typically dusted with sugar and cinnamon. Variations exist across Latin America, reflecting local ingredients and customs. In Mexico, they are commonly served with syrup or as a sweet treat during celebrations, symbolizing joy and community.

1

Pour 370 g of '00' flour into a bowl and sift it together with 12 g of vanilla baking powder and a sachet of vanillin.

2

In the center of the flour mixture, add 2 large eggs at room temperature and a pinch of salt.

3

Mix everything together starting from the center.

4

Add 30 g of melted lactose-free butter and mix.

5

Gradually add 120 ml of warm water while mixing.

6

Knead the dough with your hands until it forms a smooth and homogeneous ball, adding a little flour if necessary.

7

Cover the dough with a cloth and let it rest for 30 minutes.

8

After resting, lightly flour the work surface and divide the dough into about ten pieces, rolling them into balls.

9

Cover the balls with a cloth while preparing the sugar mixture with brown sugar, ground cinnamon, and grated orange zest.

10

Heat plenty of peanut oil in a pan over medium heat.

11

Roll out each ball into thin discs with a diameter of approximately 12-14 cm.

12

Fry the discs in the hot oil on both sides until they are slightly browned and bubbles form on the surface.

13

Drain the fried buñuelos on absorbent paper.

14

Dip the drained buñuelos in the sugar mixture, turning them to coat.

15

Optionally, brush the surface with freshly squeezed orange juice diluted with water before dipping them again in sugar.
