Prepare an infusion with 1000 g piloncillo, 3 guavas, 1 hoja de higo, anise, and cinnamon in water, simmering for 5 minutes.

In a bowl, combine 500 g flour, 1 egg, 1/2 cup sugar, 1/4 cup butter, and a pinch of salt.

Add the infusion gradually to the flour mixture while mixing until the dough is soft and slightly sticky.

Knead the dough for about 10 minutes until it no longer sticks to your hands.

Cover the dough and let it rest for 30 minutes.

Divide the dough into balls approximately the size of your hand, around 50 grams each.

Flatten each ball into a tortilla shape using a clean stick or rolling pin.

Let the flattened dough rest on a cloth to dry slightly before frying.

Heat 1 liter of oil in a large pot until it is very hot.

Fry the flattened dough in the hot oil, cooking until they turn golden brown, about 5 minutes.

Remove the buñuelos from the oil and drain on paper towels.

Mix cinnamon with sugar and sprinkle over some of the buñuelos, while others can be served with piloncillo syrup.
