Anzac Slice

1 1/4 cups plain flour
1 3/4 cups rolled oats
1 cup sugar
1/2 cup shredded coconut
75g butter, melted
75g coconut oil
2 tbsp golden syrup or honey
1/2 tsp bicarbonate soda
2 tbsp boiling water

Preheat the oven to 180°C (350°F) and line a baking dish with parchment paper.

In a large bowl, combine the rolled oats, flour, brown sugar, desiccated coconut, and salt.

In a small saucepan, melt the butter and golden syrup over low heat until smooth.

Remove the saucepan from heat and stir in the baking soda until well combined.

Pour the melted butter mixture into the dry ingredients and mix until everything is evenly coated.

Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer.

Bake in the preheated oven for 20-25 minutes or until golden brown on top.

Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Once cooled, cut into squares or bars and serve.
