Anzac Slice

1 1/4 cups plain flour
1 1/4 cups rolled oats
1 cup brown sugar
1 cup desiccated coconut
150g butter
2 tbsp golden syrup
1/2 tsp bicarbonate soda
2 tbsp water

Preheat oven to 180°C or 160°C fan-forced. Grease and line a slice pan / cake tin with baking paper.

Place coconut, oats, and flour in a large mixing bowl and mix well to combine.

Place butter, brown sugar and golden syrup into a saucepan over low heat. Cook, stirring occasionally, for 8 to 10 minutes or until smooth. Remove butter mixture from heat. Stir in bicarbonate of soda and water and stir to combine.

Add wet ingredients to dry ingredients and stir well to combine.

Transfer to prepared pan. Using the back of a spoon, press mixture evenly into pan.

Bake for 25 to 30 minutes or until golden. Cool in pan then remove and continue to cool on wire rack.

Cut into slice sized pieces and serve.
