Tyrolean Cheese Dumplings

250g stale bread
250ml milk
200g Tyrolean cheese (or similar cheese)
2 eggs
1 onion, finely chopped
50g butter
100g all-purpose flour
Salt to taste
Pepper to taste
Chopped parsley for garnish

Cut the stale bread into small cubes and place them in a large bowl.

Heat the milk in a saucepan until warm, then pour it over the bread cubes. Let it soak for about 10 minutes.

In a skillet, melt the butter over medium heat and sauté the chopped onion until translucent. Allow to cool slightly.

Add the sautéed onion, eggs, cheese (cut into small pieces), flour, salt, and pepper to the soaked bread. Mix until well combined.

Form the mixture into small dumplings, about the size of a golf ball.

Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water.

Reduce the heat and let the dumplings simmer for about 15-20 minutes, or until they float to the surface and are cooked through.

Using a slotted spoon, remove the dumplings from the water and drain them.
