2 cod fillets, fresh or desalted, 1lbs or 450g
9 small potatoes, 1.3lbs or 580g
1 large white onion, 3cups or 150 g
½ cup Portuguese olive oil, extra virgin, 120 ml
2 bay leaves
3 garlic cloves
Salt and pepper to taste
½ teaspoon hot paprika (optional)
2 tbsp or 8g, chopped cilantro or coriander (optional)

If using salted cod, prepare two days in advance by rinsing the cod, placing it in an airtight container with water, and changing the water every six hours.

If using ready to cook cod, thaw if frozen.

Select small potatoes of similar size, wash thoroughly, and scoop out dark spots. Place in a baking dish.

Season potatoes with salt and pepper. Bake at 300°F /150°C for approximately 20 minutes.

While potatoes are baking, peel and slice the onion thinly and crush the garlic.

In a skillet over medium heat, pour olive oil and add sliced onions and crushed garlic. Cook for about 10 minutes until golden brown.

Remove half-cooked potatoes from the oven and mash lightly with a fork.

Add the fried onion and bay leaves over the potatoes.

Season cod fillets with salt and pepper, place on top of the onions, drizzle with olive oil, and return to the oven at 150°C/300°F for another 15 to 20 minutes.

Remove bay leaves before serving and optionally sprinkle with paprika and chopped coriander.
