1/4 cup granulated sugar
2 lbs pork shoulder (butt roast, bone-in, skin-on)
1/2 cup sliced green onions
1 tablespoon grated ginger
1 lime (for garnish)
2 tablespoons spicy chili paste
2 tablespoons miso
2 tablespoons soy sauce
1 tablespoon sesame seeds
1 tablespoon sesame oil
1 tablespoon fish sauce
to taste salt

Mix equal parts kosher salt and granulated sugar for the cure.

Cure the pork shoulder overnight for 24 to 48 hours in the salt and sugar mixture.
