Marinate 1 pound of sirloin in soy sauce and sesame oil, add cornstarch, mix well, and let it sit for 10 minutes.
Heat a wok over medium heat and add 1 teaspoon of vegetable oil.
Scramble 4 eggs with a little salt and pepper for about 60 seconds, break them into pieces, and set aside.
Increase heat to high and add 1 tablespoon of vegetable oil followed by the marinated beef, stir-fry for about 2 minutes, then remove and set aside.
Add diced onion and minced garlic to the wok, stir-fry for 30 seconds.
Add frozen peas and carrots, stir-fry for 30 seconds or longer if you prefer softer vegetables.
Add the cooked rice (ensuring it's dry) to the wok and mix with the vegetables.
Pour in soy sauce and toasted sesame oil, stir-fry for about 2 minutes.
Add a little sugar and salt, then return the scrambled eggs and beef to the wok, stir-fry for another 2 minutes until everything is well combined and heated through.
