Soak 115 grams of rice noodles in warm water until soft, then drain.

In a small pot, combine 3 tablespoons sugar, 2 tablespoons fish sauce, 2 tablespoons tamarind concentrate, and 1/2 teaspoon salt. Heat over medium heat until dissolved, stirring for 2-3 minutes.

In a large pan, heat 1 tablespoon of oil over medium heat. Add shrimp and cook until done, then remove from the pan.

In the same pan, add 2 tablespoons of oil, then add tofu, rice noodles, dried shrimp, and the sauce from the small pot. Stir-fry until everything is well combined and the noodles are cooked.

Push the noodles to one side of the pan, add a bit more oil, and crack in 2 eggs. Scramble the eggs and mix them with the noodles for about 30 seconds.

Add the cooked shrimp back into the pan, then add 2 cups of bean sprouts and 1/4 cup of crushed peanuts. Stir everything together until well mixed and heated through.
