2 tsp vegetable seasoning
2 tbsp fish sauce
1/2 tbsp black pepper
1 tbsp garlic powder
1 tbsp chopped lemongrass
3 tbsp oil
1/2 cup water
2 tbsp annatto powder
1 tbsp chopped garlic
1 tbsp chopped ginger
2 tbsp chopped lemongrass
2 sticks whole lemongrass crushed
1 tbsp basil leaves
1 large chopped tomato
3-4 tbsp tomato paste
1 1/2 tbsp 5 spice seasoning
1 cinnamon stick
2 star anise
1 cardamom
3-4 carrots
1-2 white onions
4 L water
.5 L coconut water
2-3 tbsp sugar
1-2 tsp salt
1-2 tbsp fish sauce
1 tbsp vegetable seasoning
3 tbsp tapioca starch
3 tbsp water

Clean all the meat with salt water and pad dry.

Cut them into small chunks.

Cook tendons in the instant pot for 20-30 minutes, manual, quick release.

Combine all three meats and seasoning with the ingredients in the meat marinate section.

Set it aside and let it marinate for 30 minutes to one hour.

Prepare the broth by adding oil to a large pot on medium low heat.

Add in the annatto powder, garlic, chopped lemongrass, ginger, 5 spice seasonings, chopped tomatoes, tomato paste, lemongrass stalks, basil leaf powder, and 1/2 cup of water.

Add the meat.

Let it fry until well coated.

Add in 4 L of water and .5 L of coconut water.

Let it cook until the meat is soft.

Then add in carrots and white onions.

When the carrots and white onions are soft, add in the final seasonings and thickening agent.

Continue cooking for another 10-15 minutes so everything can blend and set.

Serve with Banh mi, rice, or noodles.
