Remove the vacuum plastic seal from the ham.
Score the surface of the ham on both sides in a diamond pattern.
Prepare the baking tray by lining the bottom with pineapple slices.
Place the ham cut side down on top of the pineapple slices.
Grind 1/4 teaspoon of ground cloves in a mortar and pestle.
Preheat the oven to 325°F (163°C).
In a pot on low heat, melt 1/4 cup of unsalted butter.
Add 1 cup of pineapple juice, 1 cup of packed dark brown sugar, 2 tablespoons of Dijon mustard, 1/2 cup of honey, 1/4 teaspoon of ground cloves, 1/4 teaspoon of ground cinnamon, and 1/4 teaspoon of freshly grated nutmeg to the pot.
Increase the heat to medium-high and cook the glaze for 6 to 8 minutes, stirring constantly to prevent sticking.
Remove the glaze from heat once it thickens, about 2 to 3 minutes more after bubbling begins.
Baste the ham generously with 1/3 of the glaze using a brush.
Loosely cover the ham with aluminum foil and place it in the preheated oven.
Bake until the internal temperature of the ham reaches 100°F (38°C), approximately 2 to 2.5 hours.
Remove the ham from the oven and take off the aluminum foil.
Baste the ham again with half of the remaining glaze and increase the oven temperature to 400°F (200°C).
Return the ham to the oven for 10 minutes to caramelize the glaze.
After 10 minutes, baste the ham one more time with the remaining glaze, ensuring it gets into the scored cuts.
Return the ham to the oven uncovered for another 10 minutes.
Let the ham rest for at least 30 minutes before carving.
Use the drippings and caramelized pineapple from the baking tray for serving.
