Old Fashioned Cinnamon Graham Crackers

Cultural Context

Graham crackers originated in the early 19th century as a health food created by Sylvester Graham, a Presbyterian minister. They were designed to promote a vegetarian diet and were made from unrefined flour. Today, cinnamon graham crackers are a beloved snack in the United States, often enjoyed with milk, used in desserts, or as a base for s'mores. Their sweet, warm flavor has made them a staple in many households, and they can be found in various flavors and forms around the world.

1

Start by measuring out 1 cup of regular flour and 1 cup of whole wheat flour.

2

Add 1/4 cup of sugar, 1/2 teaspoon of salt, 1 teaspoon of cinnamon, and 1 teaspoon of baking powder to the flour mixture and whisk together.

3

In a stand mixer, combine 1 beaten egg, 1/4 cup of canola oil, and 2 tablespoons of milk; mix to combine.

4

Add 1/4 cup of honey to the wet ingredients and mix again.

5

Switch to the paddle attachment and add in all of the dry ingredients; mix until combined.

6

Wrap the dough in plastic wrap and refrigerate for about 1 hour.

7

After chilling, place the dough on a floured work surface and roll it out to about 1/16th of an inch thick.

8

Use scallop square cutters to cut out shapes from the dough, or cut into rectangles if preferred.

9

Peel off the excess dough and use a skewer to make an impression down the middle and create eight dots on each side to prevent air bubbles.

10

Place the cut dough on a parchment paper-lined baking sheet and brush the tops with milk for a satiny sheen.

11

Bake in the oven at 375°F for about 13 minutes.

12

Let the graham crackers cool completely on the baking sheet before serving.
