Put beef ribeye in the freezer for about 1 hour to firm up.
Slice beef ribeye into steaks about 1 cm thick.
Stack steaks and cut into strips.
Grate onion or blend it to a pulp for the marinade.
Zest one lemon and one orange, adding zest to the onion pulp.
Add salt, black pepper, sumac, baharat, and white vinegar to the onion mixture and mix well.
Combine the marinade with the beef, ensuring all pieces are coated.
Marinate beef for 30 to 60 minutes.
In a large pot, add marinated beef and all marinade along with green chilies and a tomato.
Bring to a boil on high heat, then reduce to low and cook until tender (30 minutes to 2 hours).
Optionally add animal fat for extra flavor and juiciness.
Check meat for tenderness, adding liquid if necessary to prevent burning.
Prepare tahini sauce by mixing tahini, yogurt, water, lemon juice, salt, black pepper, cumin, and chili powder.
Slice red onion and mix with salt and sumac, letting it sit for 15 minutes.
Chop parsley and set aside for garnish.
Make a tomato salad with macerated onions, sliced tomatoes, and chopped parsley.
Once meat is tender, uncover and cook over medium heat to reduce liquid and develop browning.
Mix in tahini sauce, softened red onions, and chopped parsley into the meat mixture.
Serve in soft buns or wrap.
