Start by peeling the shrimp and set the shells aside.

In a pot, add 4 cups of water, 2 cloves of garlic, and 1/2 of a red onion for flavor.

Add a pinch of salt to the water and bring it to a boil for 30 minutes.

While the water is boiling, cut the Roma tomatoes in half and scoop out the seeds.

Dice the tomatoes and cucumbers into small cubes.

Once the water is boiling, add the shrimp shells to the pot.

Add the shrimp to the boiling water and stir to cook evenly for 5 minutes.

After 5 minutes, turn off the heat and let the shrimp sit for 5 minutes to cool.

Remove the garlic cloves and half onion from the pot.

Add the cooked shrimp to the diced vegetables in the serving dish.

Add the juice of 15 limes and 1 cup of the shrimp cooking water to the dish.

Pour in half a bottle of Clamato and season with salt to taste.

Toss everything together gently to combine.

Serve the ceviche on tostadas with avocado and hot sauce (like Tapatío) on top.
