Wrap the water bowl and drip tray of the smoker with aluminum foil for easy cleanup.

Add a small handful of hickory wood chips to the smoker.

In a mixing bowl, combine mayonnaise, pimento, and cream cheese, and blend together.

Add the alowette sundried basil cream cheese spread to the mixture and blend until smooth.

Chop onions and add them to the mixture.

Gradually add sharp cheddar cheese and KBY Jack cheese to the mixture while blending.

Transfer the blended mixture to an aluminum disposable tray.

Place the tray in the smoker set at 225°F and smoke for 20 minutes.

Remove the smoked pimento cheese from the smoker and serve on crackers with smoked sausage and jalapeno pepper.
