Pimento Cheese Dip

2 cups sharp cheddar cheese (thick cut)
1 block cream cheese (at room temperature)

4 ounces diced pimentos

Preheat the oven to 400 degrees Fahrenheit to bake the bacon.

Gather the ingredients: sharp cheddar cheese, cream cheese, sea salt, pepper, Worcestershire sauce, garlic powder, onion powder, cayenne pepper, Duke's Mayo, and diced pimentos.

Cube the cream cheese to make it easier to mix.

Drain the juice from the diced pimentos and chop them if they are not already chopped.

In a bowl, add the cubed cream cheese and the diced pimentos.

Add sea salt, pepper, garlic powder, onion powder, cayenne pepper, and Worcestershire sauce to the bowl.

Mix the ingredients together until well combined, using a wooden spoon or a hand mixer.

Add about 2 tablespoons of Duke's Mayo to the mixture and continue mixing until fully incorporated.

Taste the pimento cheese dip and adjust seasoning if necessary, then refrigerate it to harden while the bacon cooks.

Prepare the bread for the grilled cheese sandwiches by spreading Duke's Mayo on one side of each slice.

Add two pieces of bacon on top of the pimento cheese and cover with another slice of bread, Mayo side up.
