Preheat the oven to 375°F (190°C).

Grease a baking dish with butter.

Season halibut fillets with salt and black pepper.

Place halibut in the prepared baking dish.

In a skillet, heat olive oil over medium heat.

Add minced garlic and shallots; sauté until translucent, about 2-3 minutes.

Pour in white wine and simmer until reduced by half, about 3-4 minutes.

Stir in heavy cream and bring to a gentle simmer.

Add grated parmesan cheese and nutmeg; mix until cheese melts.

Pour the creamy mixture over the halibut fillets.

In a bowl, combine breadcrumbs, melted butter, and chopped parsley.

Sprinkle the breadcrumb mixture evenly over the halibut.

Bake in the preheated oven for 20-25 minutes, until the fish is opaque and flakes easily.

Broil for an additional 2-3 minutes until the top is golden brown.

Remove from the oven and drizzle with lemon juice before serving.
