Baked Sea Bass, or 'Branzino al Forno', hails from the coastal regions of Italy, where fresh fish is a staple. This dish reflects the Italian philosophy of using simple, high-quality ingredients to enhance natural flavors. Traditionally served during family gatherings or special occasions, it showcases the Mediterranean diet's emphasis on seafood. Today, variations of this dish can be found in restaurants worldwide, often adapted to local tastes and available ingredients.

Clean the sea bass by removing the insides, gills, and fins.
Pat the fish dry with paper towels.
Make cuts on the fish about every 2 cm on both sides.
Place the fish in a suitable container and cover with cucumber brine, ensuring the fish is fully submerged. If cucumber brine is unavailable, use salted water instead.
Let the fish soak for 30 minutes to 1 hour.
Transfer the fish to a bowl and let the brine drain off while preparing the marinade.
In a bowl, combine 1 teaspoon lemon pepper, 1 teaspoon smoked paprika, and 2 tablespoons olive oil.
Mix the marinade and coat the fish on all sides and inside.
Cover the fish with plastic wrap and let it marinate for 30 minutes.
Slice the onion into rings and the lemon into wedges.
On a piece of foil, place 4 rings of onion and 2 wedges of lemon, then place the fish on top.
Stuff the fish with 2 cloves of garlic, cut in half and crushed.
Wrap the fish in the foil, ensuring it does not touch the top of the fish.
Place the wrapped fish on a baking tray and put it in a preheated oven at 180°C (356°F).
Bake for 25 minutes.
Open the foil and switch to grill mode, baking for an additional 10 minutes.
