Stuff the cavity of the sea bass with lemon slices and additional rosemary if desired.
After 20 minutes, remove the potatoes from the oven and stir them.
Add the prepared sea bass to the baking sheet with the potatoes.
Continue roasting for an additional 15-20 minutes until the fish is cooked through and flakes easily with a fork.
Remove from the oven and let rest for a few minutes before serving.
