Avocado oil is healthier while vegetable oil is more economical.

In a pot with water, boil the green plantain with salt for 15 to 20 minutes until very soft.

Once soft, drain the plantains and mash them well with margarine until completely smooth, without any lumps.

Add a little of the salted water used for boiling to the mashed plantain.

Form small balls from the mixture, enough for three medium tortillas.

If desired, add white onion to the mixture before forming the tortillas.

Shape each ball into a tortilla, making them nice and flat.

In a non-stick skillet, heat 2 teaspoons of oil.

Cook each tortilla until golden brown on both sides, about 3-4 minutes per side.

Serve warm, optionally with scrambled eggs and coffee.
