Kroštule

Cultural Context

Kroštule are traditional Croatian pastries, often enjoyed during festive occasions like Carnival and Christmas. These delightful fritters showcase the simplicity of Croatian dessert-making, using basic ingredients to create a crispy, sweet treat. Today, kroštule are loved not only in Croatia but also in various regions of the Balkans, where they may be adapted with local flavors.

1

Beat 4 eggs in a bowl using an electric mixer until thick and slightly light yellow in color (about 5 to 10 minutes).

2

Gradually add 50 grams of sugar and a pinch of salt, beating until dissolved.

3

Add 1 tablespoon of melted margarine or melted butter, 10 milliliters of vanilla extract, and 10 milliliters of water, mixing well.

4

Add approximately 1 cup of flour and mix using the beaters until combined.

5

Add the remaining flour and mix with a wooden spoon until the mixture is doughy but still a bit soft.

6

Spread extra flour on a pastry mat and transfer the mixture onto it, working in more flour to firm up the dough.

7

Chill the dough in the fridge for 20 minutes.

8

Break the dough into roughly three equal parts and roll one part out as flat as possible until it is slightly transparent.

9

Cut the rolled dough into strips approximately 3 centimeters wide and 12 centimeters long, making a small cut in the middle of each strip.

10

Create a knot by threading one end of the strip through the cut in the middle and repeat for all strips.

11

Heat vegetable oil in a pan over low to medium heat.

12

Using two forks, place each piece of dough into the oil and fry until they float and turn a golden color, flipping them to cook both sides.

13

Remove the fried pieces using forks and place them on greaseproof paper or paper towels to drain.
