Banana Oatmeal Cookies

2 large bananas

Preheat the oven to 350 degrees Fahrenheit.

Line a baking sheet with parchment paper and set aside.

Peel 2 large ripe bananas and break them into chunks in a large mixing bowl.

Use the back of a fork to mash the bananas until they are soft and have a baby food puree texture.

Add 1.5 cups of quick cooking rolled oats to the mashed bananas and stir to combine.

Add 0.5 cups of chocolate chips (or other mix-ins like raisins, dried cranberries, or spices) to the mixture and stir.

Using a 1.5 tablespoon cookie scoop, scoop the cookie mixture onto the lined baking sheet, scraping off excess with the side of the bowl.

Flatten each cookie with your fingers into flat round shapes, washing hands if the mixture becomes sticky.

Bake the cookies for about 13 to 15 minutes or until lightly golden on the edges.
