Heat mustard oil in a pan over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and ginger; cook until fragrant, about 1 minute.
Add green chilies and sauté for another minute.
Sprinkle in turmeric, coriander powder, and cumin powder; stir to combine.
Add the chopped dried pumpkin to the pan; mix well with the spices.
Pour in a little water to help cook the pumpkin; cover and simmer for 10-15 minutes.
Season with salt and black pepper to taste; stir occasionally.
Once the pumpkin is tender, remove from heat and stir in fresh cilantro and lime juice.
Serve warm with rice or as a side dish.
