Red Velvet Cupcakes

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a large bowl, sift together the flour, sugar, baking soda, cocoa powder, and salt.
In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fill each cupcake liner about 2/3 full with the batter.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
While the cupcakes are cooling, prepare the cream cheese frosting by beating together the cream cheese and butter until smooth.
Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Once the cupcakes are completely cool, frost them with the cream cheese frosting using a piping bag or a spatula.
