Red Velvet Cupcakes
Preheat the oven to 325°F.
In a mixing bowl, combine the cake flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, mix the canola oil, unsalted butter, egg, vanilla extract, buttermilk, and distilled white vinegar.
Add the wet ingredients to the dry ingredients and mix until combined.
Add the red food coloring and mix until the batter is smooth.
Fill cupcake liners with the batter and bake for 15-17 minutes or until done.
While the cupcakes are baking, prepare the frosting by creaming together the stick of butter, cream cheese, and vanilla extract.
Gradually add the powdered sugar to the frosting mixture and mix until smooth.
Once the cupcakes are cooled, frost them with the cream cheese frosting.
