1/2 teaspoon Old Bay seasoning
5 tablespoons butter
1 tablespoon garlic
1/3 cup flour
1/2 cup chicken broth
1 pint half-and-half
1/2 cup heavy whipping cream
1/2 cup Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon garlic salt
1 teaspoon liquid seafood boil
32 ounces ricotta cheese
1 egg
1/4 cup parsley
olive oil

Fill a large pot with water and add salt; bring to a boil.

Add 12 to 14 lasagna noodles to the boiling water and cook for 10 to 12 minutes; set aside.

Shred 1/2 cup of fontina cheese and set aside.

Drain the noodles using a handheld strainer and set them aside.

In a large bowl, combine bass, scallops, crab claw meat, and crawfish meat; mix until well combined.

Add 1 teaspoon of creole seasoning, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of pepper, and 1/2 teaspoon of Old Bay seasoning to the seafood mixture; mix until well combined and set aside.

In a pan, melt 5 tablespoons of butter; add 1 tablespoon of garlic and sauté for under a minute.

Add 1/3 cup of flour to the pan and mix until well combined.

Add 1/2 cup of chicken broth to the mixture and mix until well combined; it will thicken quickly.

Add 1 pint of half-and-half to the mixture and whisk until smooth; then add 1/2 cup of heavy whipping cream and mix again until thickened.

Add 1/2 cup of Parmesan cheese and 1/2 cup of fontina cheese to the sauce; mix until well combined.

Add 1/2 teaspoon of pepper, about 1/4 or 1/2 teaspoon of garlic powder, 1/4 teaspoon of creole seasoning, 1/4 teaspoon of salt, 1/4 teaspoon of garlic salt, and 1 teaspoon of liquid seafood boil to the sauce; mix until well combined and set aside.

In a medium-sized bowl, add 32 ounces of ricotta cheese and 1 egg; mix until well combined.

Add 1/4 cup of parsley to the ricotta mixture and mix until well combined; set aside.

Oil a large baking dish and spread the oil around until completely covered.

Add a small amount of sauce to the bottom of the baking dish and spread it around.

Layer 6 lasagna noodles over the sauce, then add half of the ricotta cheese mixture, half of the seafood mixture, and cover with Italian blend cheese and a bit of mozzarella cheese.

Add half of the sauce over the cheese layer and cover with Parmesan cheese.

Repeat the layering process: noodles, ricotta, seafood, cheese, sauce, cheese.

Add more Parmesan cheese on top; optionally add mozzarella cheese on top as well.

Cover the dish with tinfoil and bake in the oven at 375°F for about 20 minutes.

Remove the tinfoil and cook for another 25 minutes.
