Chop large shrimp into bite-sized pieces and season with Creole seasoning and liquid crab boil.
Combine shrimp, crawfish, and crab in one bowl and set aside.
In a bowl, mix garlic and herb cream cheese, sour cream, shredded Parmesan cheese, and fresh basil until creamy; set aside.
In a cast-iron skillet, heat olive oil and wilt spinach; set aside once wilted.
Melt butter in the same skillet, then add minced garlic and sauté for 30 seconds without burning.
Add all-purpose flour to the melted butter, stirring for about one minute to create a roux.
Slowly pour in chicken stock while stirring to avoid lumps; continue whisking until the sauce thickens.
Add Creole or Cajun seasoning and fresh cracked black pepper to the sauce; stir in shredded Parmesan cheese until melted and combined.
Spray a smaller baking dish with nonstick cooking spray and add a thin layer of the sauce to the bottom.
Cook lasagna noodles according to package instructions, adding liquid crab boil to the water; layer noodles over the sauce, overlapping them slightly.
Spread the cream cheese filling over the noodles, then add the seafood and wilted spinach on top.
Sprinkle shredded fontina and mozzarella cheese over the seafood and spinach, then pour over more Alfredo sauce and spread it out.
Repeat the layering process two more times until you have three layers total.
Bake uncovered at 375°F for 40 to 45 minutes, then broil the top for 5 minutes on the center rack.
Let the lasagna rest for at least 15 minutes before cutting into it.
