Cover the pot and cook on medium heat, stirring occasionally, for about 15 minutes without adding water.

Check the chicken after 15 minutes; the water should start to release from the chicken.

Continue cooking for about 40 minutes on low heat, stirring occasionally, until the oil starts to separate and the chicken is tender.

Add water from the garlic, chili, and ginger mixture, and a jug of hot water, depending on desired gravy consistency.

Cover and cook for about 1 hour, checking every 10-15 minutes to ensure nothing is catching at the bottom.

After about 30 minutes, check the water level and add more if necessary.

If the chicken is not tender yet, continue cooking and check for doneness by trying to break a piece of meat.

Add additional Masala if desired, and cover to cook for another 10-15 minutes.

Finally, add the tamarind pulp and mix well.
